Skirt Steak Skewers

Yall these are for sure a crowd pleaser. I am so impressed with how well they turned out! They are an easy appetizer.. sometimes I get lost on what to do with skirt steak. You can really only do so much.. fajitas, burritos, etc. This is a perfect alternative to utilize that skirt steak that is an easy recipe and also so delicious for when you have people over!

2-3# of skirt steak

Salt and Pepper


I know typically you are supposed to marinate beef, but I honestly skipped this step cause sometimes it changes the flavor and I like to make sure we are producing quality always. So I don’t usually marinate… because it should taste good without it! So I didn’t… the first think you have to do is slice the skirt steak against the grain. THIS IS IMPORTANT!! If you do not go against the grain it will be tougher. Make sure you slice in thin pieces.. and inch thick max! Then take the skewer and weave the meat pieces on the skewer back and forth. Place on the oven at 400 and cook 5-10 minutes on each side.. depending on how you like your steak cooked. Remove from the grill and let rest for at least 10 minutes! This is such an important step people usually miss!

 

Cowboy Butter

1 stick of butter,

juice from half a lemon

1 tablespoon dijon

pinch of cayanne

1/4 tsp. cayenne pepper

1/4tsp paparika

2 tblsp parsley

1 tblsp chives

2 tsp. thyme

1/4 tsp crushed red pepper flakes

salt and pepper.

Mix together & Enjoy!

Smokey Red Chimichurri

1tsp. Chipotle chili powder

6 cloves garlic

1/4 cup fresh parsley

2 shallots

1tsp paprika

1/4 tsp pepper flakes

1/2 cup olive oil

2tbsp red wine vinegar

1/2 tsp. cumin

Put in food processor, pulse.
